Smash Burger Sauce Recipe (Classic Special Sauce)
Smash burger sauce — also called special sauce or burger sauce — is what separates a good smash burger from a great one. Ingredients
- ½ cup mayonnaise (Duke’s or Hellmann’s)
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 2 tbsp dill pickle relish (or finely minced dill pickles)
- 1 tsp white vinegar
- 1 tsp sugar
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp smoked paprika
- Pinch of cayenne (optional)
- Salt and black pepper to taste
Instructions

How to Use Smash Burger Sauce

Variations
Spicy version: Add 1–2 tbsp of hot sauce (Frank’s or Cholula) or increase the cayenne to ½ tsp. Sriracha works well too.
Smoky version: Double the smoked paprika to ½ tsp and add ½ tsp chipotle powder.
Big Mac-style: Use sweet relish instead of dill relish and add 1 tbsp of finely minced white onion.
Tangy-forward: Increase the white vinegar to 2 tsp and add 1 tsp Dijon mustard alongside the yellow mustard.
Tips
Quality mayo matters. Duke’s or Hellmann’s are the standards — they have the right fat content and tang. Light or store-brand mayo produces a thinner, blander sauce.
Dill, not sweet. Sweet relish makes the sauce taste like a hot dog condiment. Dill relish or finely minced dill pickles is the correct call.
Make it ahead. Smash burger sauce made the day before is noticeably better than freshly made. The vinegar and pickle flavors meld with the mayo base overnight.
